This recipe comes courtesy of the domestic goddess herself Nigella Lawson. A beautifully flavoured flat omelet that can be eaten any time of day as a snack or light meal. We especially like it in crusty rolls/French stick as a hot sandwich, but would be great rolled up in a chapatti or just eaten flat on a plate.
This is a recipe that I came up with after making Lorac’s Curried Zucchini and Potatoes. If you like this you will LOVE Lorac’s dish! I just want to give a SPECIAL thanks to Lorac for a wonderful recipe, and for inspiring me to experiment with it!!! Thanks Lorac!
We love this dish. It is fast and easy, too! My mom would usually serve it with a variety of condiments to go on top like coconut, pineapple, raisins, bacon, peanuts, etc.
This dish goes together very quickly. You will have dinner on the table in less than 30 minutes. If you don’t have cooked rice, start it before you make the curry and they should be finished at the same time.
