Chaimen- an Armenian Spice Rub! (Use for Basterma)

Well, without Chaimen, there would be no Basterma! I LOVE Basterma…It is so delicious. A real delicacy. Sliced very, very thin and eaten with The wonderful Armenian bread-Lavash. Can you tell I like Armenian food?? I can’t help it-It’s in my blood. Thanks to my Aunt Sophie!

Albanian White Bean Soup (Jani Me Fasule)

A rich delicious soup. Good as a part of suhoor or futoor (iftar) the meals before sunrise and fajr prayer and after sunset & maghreb prayer during the month of Ramadan. Here is what the original poster had to say, “This is not only the most popular dish in Greece but Albania as well. The two countries share many recipes. The Greek dish however uses olive oil and mint instead of butter and paprika. Afghan Dressing (Or Dip)

I was concocting dip and dressing recipes one day, and I was half watching CNN news at the same time when Osama bin Laden’s face appeared on the TV screen – hence the name. Enjoy it – it’s tasty.

Algerian M’shewsha. No Oil – Healthier Version!!! Breakfast Dish

M’shewsha is a delicious Algerian dish made with lots of eggs, a little semolina & a little flour. Most traditional recipes call for quite a lot of oil, my other recipe has reduced oil in it but I wanted to find a healthier version – here it is! You pour warm honey over it & allow it to soak in……..delicious! M’shewsha can be enjoyed for breakfast or with afternoon coffee – it tastes like a cross between cake, a fluffy pancake & French toast! Traditional, it is thought to give you a lot of strength – manual labourers eat it often, as do women who’ve just had a baby! This is also great for Suhor during Ramadan – yum!

Felfel B’tomatish – Algerian Pepper & Tomato Salad

This is a classic Algerian ‘salad’ dish. You can either grill the tomatoes & peppers over an open flame, deep fry them or roast them. My family loves this recipe & we always mop it up with fresh bread! You can also serve this as part of a mezze selection. The vinegar is of course optional but it acts as a flavour enhancer so I do recommend at least trying a little of the salad with a few drops of vinegar on!
