Cornish hens, like baby chickens are small enough to serve one per person. Serve with your favourite roasted veggies, or bok choy and Maple Squash. A delicious recipe developed and shared by “chatelaine” Magazine.
This recipe makes a nice dinner and is from The Pillsbury Family Kitchens’ Cookbook. I use 1 can (10 3/4 ounces) chicken broth and enough water to make 2 cups (and heat it in microwave) in place of water and bouillon cubes. This recipe can also be used with quartered or cut up frying chicken. I have only made it with the cornish hens.
(Galletto con Salsa di Spinaci) OOOOOOOOOOOOOh, is this yummy! It is a nice change from a plain baked chicken breast and is easy to make in quantities for a dinner party. I have made this with both Cornish Game Hens and with Bone-in, Skin-on Chicken breasts* and it turns out fabulous either way! Mangia!
A grilled & glazed Cornish hen recipe from the Today show kitchen. I haven’t tried this recipe yet but it looks delicious
I am a huge fan of cornish hens because they are all white meat – my favorite part! This is a great main course for a special occasion or holiday with a small gathering, or just for a special weekend treat. YUMMY!
