Cornish Hens and Vegetables in Foil Packets

This makes the most moist and delicious cornish hens I’ve ever tasted. It’s from 365 Ways to Cook Chicken. The beauty of this dish is threefold. First of all. the individual packets can be prepared hours before dinner and refrigerated. Secondly, for those on a low-fat diet, this method of cooking is ideal: simply reduce the butter to 1 teaspoon a serving. And last but not least, the bright yellow squash, orange carrots and red-skinned potatoes make a lovely presentation. A mandolin or food processor with slicing blade makes for a quicker prep.

Tesco Cornish Pasties

While visiting family in England we went shopping at Tesco and picked up this recipe. I have never made it but my mom has and it always comes out yummy! Can’t wait to try these myself.

Pendarvis House Cornish Pasty

The Pendarvis House is located in Mineral Point, WI, settled by miners from Cornwall, England who were brought there to work in the lead mines in the 19th century. The pasty was a favorite lunch dish of the miners as it could be carried to work in their pockets and eaten at their pleasure, not worrying about it leaking into their pockets. This makes one large pasty which can be sliced up to feed 6-8.
