Tomato, Cheese and Onion Muffins

This savory muffin is very crumbly texture. Could be eaten as a snack or put in kids lunch boxes. I used pizza tomato topping sauce for the tomato sauce and it worked well.

Chicken in Coriander / Cilantro Sauce

My neighbour was telling me about this dish a while ago and they way she explained it made my mouth water. I asked her a copy of the recipe and here it is now on Zaar. I’ve only tried it once and next time I make it I may remove the liquid/sauce and puree it so it could be a thicker green sauce. I will also try it with chicken thighs as I used chicken breast and it wasn’t tender as I wanted it to be. Overall the flavours were yummy and I served it with cous cous. UPDATE!! After much consideration and experimentation, I’ve double to sauce as suggested by the reviewers – NOTE!! An “average” sized bunch of coriander is 60 grams (2 oz) = 1 1/2 cups chopped

Chef Flower’s Simple Avocado Dip

I make this all the time, you will need a food processor to have a smooth texture, but if you decide to make it by hand then it will not be as smooth creamy texture and the flavour will be different.

Deluxe Fried Eggs

A simple and delicious way to transform fried eggs into a substantial one-dish brunch or snack dish. I read the basic idea for this recipe somewhere recently, then couldn’t find it again, but I added to the original idea – which just had garlic sautéed in the oil before adding the eggs – when I made this for brunch yesterday. I used some wonderfully orange-yolked free range eggs which certainly added to the visual appeal! Everyone loved it, and I’ll be making this again! The proportions used could, of course, easily be varied.
