I love this when the fresh asparagus is in season. Sometimes I throw in some onion wedges or a red capsicum for colour with the asparagus. Prep time includes marinating time.

Apricot Chicken

A favourite in our home….tastes even better reheated the next day. Serve with either plenty of boiled rice or mash potato. Can be made gluten free by using gluten free flour liquid stock and dry soup mix. In Australia Massell stock is gluten free as is Basco GF dry french onion soup mix.Options- top with some ground pepper or stir through some parsley or cilantro (coriander) before serving. For anyone who is gluten-free you can use “Recipe#244204” to make your soup replacement to use in this chicken dish

Lemon and Oregano Lamb Chops

From May 2007 Australian Super Food Ideas. Suggested to serve with roasted potatoes and onion with a tzatziki dip. Do not include marinading time but do include 5 minutes resting.

BBQ Chicken Teriyaki

A very simple marinade….fantastic results. You can either serve the chicken breasts whole or sliced into large pieces. This recipe will marinate 6 chicken breasts(of course you can use other cuts of chicken) To make this dish gluten free ensure the soy sauce used is labelled as GF. Currently Fountain brand is GF in Australia, also many tamaris and some Japanese soy sauces.
