Garlic Panko Chicken Strips

I needed something quick for dinner last night, and so created this on-the-spot — inspired by a garlic chicken recipe I read in a cookbook, which used whole chicken pieces, skin and bone. Plus I wanted to finish off my bag of panko so I could go buy a new one. I was so pleased with how this turned out that I intend to make it regularly. Panko are japanese bread crumbs and they are highly superior to any other type; please try to source them out for this dish rather than use regular dry bread crumbs. The “international” or “ethnic” aisle in your grocery store should sell panko; if not, complain to the manager!

Baked Ham and Cheese Omelet Roll

This is an easy way to serve omelets. In our house, it takes me forever to make breakfast on the stove top! Baking this is soooo much easier. Feel free to add or subtract to suit your tastes (bacon, sausage, onions, peppers, etc.)

Make-Ahead Twice-Baked Potatoes

These twice baked potatoes are great to keep in the freezer for busy days or unexpected company! When baking potatoes are on special, I buy a 10-15 pound bag and make about 30-35 of these creamy, delicious potatoes for the freezer. A wonderful side dish with steaks, roasts, seafood, pork and meatloaf. For variety, sprinkle top of potatoes with real bacon pieces just before serving. To have a meatless lunch, I often heat one of these potatoes in the microwave or toaster oven.

Easy Peezy Pizza Dough (Bread Machine Pizza Dough)

This is a really easy way to make a good “yeasty” pizza dough! As well as using this recipe for when I’m making pizza, I also use it for when I’m making a focaccia or a calzone. (The preparation time I have given includes the time it takes to make the dough in the machine and the time it takes for the pizza dough to proof – after removing it from the bread machine, 30 minutes.)

Baked Chicken

This chicken recipe is so easy, I hesitated in posting it. But I couldn’t find it posted here, and it’s so good, I thought I’d share it. It’s my favorite way to bake chicken because it’s moist and tender every time and the flavor is delicious!
