Vegetable Lo Mein

Adapted from a recipe by ANGCHICK at allrecipes.com. An excellent side dish for any Asian meal, try adding ¾ lb cooked meat (chicken, pork, beef, shrimp), cut in julienne, for a main dish. * The best noodles to use are found in Asian markets, labelled “lo mein.” They’re a slightly dry, curly, fresh egg noodle. Next best is regular dried linguini. Dried egg noodles will turn mushy, as will vacuum-packed “fresh Chinese-style” egg noodles. * Hoisin sauce, also called Peking sauce, is a thick, reddish-brown sauce that is sweet and spicy, and widely used in Chinese cooking. It’s a mixture of soybeans, garlic, chile peppers and various spices. It can be found in Asian markets and many large supermarkets. Look in the Asian or ethnic section. If this item is not in stock at your local store, ask your grocer to special order it for you. Most grocers will be happy to do this for their customers.

Chicken Chow Mein

I love Chicken Chow Mein and have found that each restaurant has it’s own take on the recipe. Therefore, I have tried to compile my own favorite. This was originally from the Food Network Kitchens but it is now from Diane’s Kitchen.;) Don’t let the long laundry list frighten you, you have to get it all ready before hand and then it’s a breeze! Most of the ingredients are seasonings and items you find in your pantry. Update: 05/04/2009 – sorry but I made this over the weekend again and I tweaked it even more – I used 3 scallions instead of 1, crushed red pepper flakes – it needed a bit of a zing – used 6 ounces of button mushrooms instead of 4. Of course we have to be careful with the dark soy sauce, I use low-sodium Tamari (the flavor is much smoother) also, it is not as salty as the other – at least I think so!!

Little Chinese Laundry Bundles – Spring Rolls

Just in time for Chinese New Year! My take on classic Spring Rolls, filled with minced chicken and crisp Chinese seasoned vegetables. I decided to shape these into little square bundles (As I remember seeing in the Far East on Laundry Days), rather than the usual elongated rolls – you can then tie the bundles with fresh chives blades if you have any, although that is not necessary, just a nice idea for a classy presentation! The RSC ingredients I have used in this recipe are: Spring roll wrappers, fresh cilantro leaves, soy sauce, chicken breast, broccoli slaw mix, fresh cucumbers and peanut butter. I hope you have as much fun as I did when I made these!

Lotus Flowers

These are lovely little fritters–sort of Chinese beignets–with a very mild flavor. Delicious served with a sweet, spicy dipping sauce.

Cantonese Chicken

From Company’s Coming cookbook. I’ve adjusted the recipe for 2 servings. This is a thin sauce but so tasty spooned over the chicken and mashed potatoes. Prep time does not include marinating. Easily doubled.
