I’ve been trying to come up with a tofu breakfast that I really like. This uses the mexi-cali herbs and spices we often cooked with in LA. The veggies I used were the ones I had on hand, but diced sweet potato, carrots, nopales (if you have that on hand I envy you!), or a tablespoon or two of corn kernels or black beans would probably also be tasty. I tend to eyeball herbs and spices, so the measurements here are best guestimates– add more or less to your own taste.
I love these fish tacos. You can find them in many California areas. You can either order the fish grilled or fried and because I love deep fried food, it’s always fried fish for me when ordering or making them. Besides the spicy cabbage slaw I also like to top the whole thing with mounds of salsa and taco sauce. Goes great with Pacifico!
A quick and tasty one pot meal! The original recipe comes from the Pressured Cook and includes Sweet Potatoes, however I’ve found it very difficult to keep from over cooking the sweet potatoes so substituted red potatoes. Also made some other changes to the recipe to ‘kick it up a notch’. Total time includes marinading the pork chops.
