From Steven Raichlen. Suggested fish include striped bass, sea bass, mahi mahi and bluefish, but others would certainly work. This method can also be used for whole fish. Prep time includes marinating time. Serve with lime wedges and hot sauce.

Meatballs / Rissoles. Family Recipe

Meat rissoles (meatballs) with rice, cheese & ginger. Rissoles are a family favorite that is simple to make. I’ve used the combination of pork and beef and they are equally good. Freshly grate your cheese with ginger powder. There is not a frying! Rhubarb Ginger Damper

Damper is a traditional Australian bread, but this version is cut up and served as a kind of scone. The recipe comes from the Australian Women’s Weekly cookbook “Muffins, Scones and Breads”. Recipe posted for Zaar World Tour 2005. NOTE: Australian chefs use a larger tablespoon measure so will only need 2 tablespoons of crystallised ginger and the same for the extra sugar.
