Sweet and Sour Chicken

I fancied some sweet & sour chicken with a good quantity of nice thick sauce but couldn’t seem to find a recipe so came up with this. I used Bill Hilbrich’s recipe#2641 as a starting point for the sauce. It makes a generous size dish for two with lots of sauce for the rice / couscous or you could use say 500g of chicken and divide it four ways.

Braised Rabbit in Red Wine Argentine Style

Argentina is a meat lovers’ paradise. In the farms and field villages of the central states the cooks love to braise with red wine, and rabbit is very popular there. This recipe is a favorite of Andrew Zimmern, host of the TV show Bizarre Foods.

Muamba De Galinha (Angolan Chicken Stew)

This is the national dish of Angola, at least according to Wikipedia. It gets is characteristic flavor from red palm oil which gets its color from lycopene. It is also antioxidant rich and studies have shown it can help prevent heart disease by regulating the balance between good and bad cholesterol. You can find it in health food stores. Serve this dish with boiled yuca (cassava) or over rice. Prep time does not include marinating time.

Albanian Burger Steaks

Yeah, these are a tad different. Remember you don’t have to eat them just as steak/burger/patty thingie, You can slap ’em onion buns (Or whatever buns/bread you like) and play around with your fav. condiments if you want. I know someone who actually makes a gravy (of sorts) out of veggie broth. onions, cornstarch and some other odds and ends I’m not sure of and makes his own style of an open face sandwich with mashed taters and wilted lettuce along with this burger and puts his crazy gravy thing on it., I also think he omits most if not all of the mint. I myself am not a mint fan, and usually only use just about 1/3 of what’s called for, and I don’t use the mint garnish. Support Our Cattle Farmers!!
