Artichoke and Chicken Bake
This easy but elegant entree first appeared in “Quick Cooking” magazine. Someone posted this at the Somersize website, which is where I found it. I usually have this over a bed of fried spinach or zucchini ribbons.

This Five Ingredient Caprese Chicken is super fast and only uses pantry staples. It’s healthy, gluten-free and kid-friendly.
This recipe comes from a bag of frozen meatballs, and it is very easy, quick and yummy. I followed the recipe exactly with the exception of doubling the sauce and adding a few more meatballs than called for, and I served over noodles. This is a terrific weeknight meal that will be enjoyed by adults and kids alike.
This is just the pizza for anyone wishing to try something different and delicious. No tomato sauce on this one. A favorite in my house and with guests.
These little delights are easy and out of this world delicious! The pita pocket makes a lovely, crispy crust. I make one of these and pop it into my toaster oven and in about ten minutes have a “gourmet-style” lunch. Fantastic for cutting into quarters and serving as party appetizers too. Note: The tomato, pesto and feta cheese amounts are approximate – put on as much or little of each as you want.
