This recipe was given to me by a good friend, it’s quick to prepare and easy to put together. Just mix the dried ingredients in a bowl, then blend the wet ingredients in another bowl and mix them together. Please note one Australian tablespoon is four US/UK teaspoons
Most kids love 2-minute noodles and corn fritters so in this recipe, adapted from a recipe on the Simply Great Recipes website, the two have been combined to make yummy kid-friendly pancakes. If you want to sneak in some different vegetables, you could probably get away with this the second or third time you make these! For an adult version, perhaps add bacon, garlic, and serve with sour cream and lemon wedges.

This is a really simple dish. It makes a great entree for 6 or a main meal for 4 people. This recipe can easily be made gluten-free – just ensure your ingredients are gluten-free. Most tamari sauce is GF or I use “Fountain” brand soy sauce that is now GF. If you do not require a gluten free sauce you can use regular soy sauce
