Bahamian Conch Fritters
Probably the most popular recipe in the Bahamian/Caribbean cuisine. Fresh Conch isn’t always easy to find, and it has to be fresh. Be careful to keep it refrigerated and use as soon as possible.

A friend of mine, Debbie, is from the Bahamas and she gave me this recipe. This is a traditional Bahamian recipe that is made with conch, the wonderful shellfish that is delicous but not so easy to find outside of the Bahamas. We, here in South Florida, are very close to Key West; the Conch Republic. These fritters are great as appetizers, finger foods or very tasty hors d’oeuvres to accompany your favorite rum punch or tropical drink! Conch can be replaced with any seafood. Make this batter with calamari, shrimp, imitation crab meat and lobster & see how awesome it turns out. Read about CONCH on the web, it’s interesting. BEWARE – these are HOT.
Rissole (ris sow lay) In this recipe you boil potatoes, mash and chill then you add butter, egg yolks and Swiss cheese, mix and chill. After chilling shape into sausage rolls and coat in flour and dip in egg wash and then in soft bread crumbs; chill again and then deep fry until golden. These potatoes are crunchy crisp on the outside yet soft and tender on the inside. A sprinkling of parsley flakes creates an interesting eye appealing touch. It is preferred to use mealy potatoes such as Idaho, Maine and Long Island varieties.
This World War II recipe was first published by Marmite and is a tasty Vegetarian alternative to regular Rissoles. I’ve rewritten the directions to be a little more precise and suit modern methods to a greater extent. Marmite is a British ‘spread’ and you can obtain it at an international grocery store in the United States. As a WWII ad for Marmite says “stock your larder with a few jars of Marmite now!”. Enjoy 🙂 Please Note: Preparation time includes Rice Cooking time!
