BBQ Jalapeno Cornish Game Hens

I think this one is from Sunset Magazine but I’m not sure. Where ever it was it’s one of the all time greats. If you make your own jelly you can control the heat, cut back on the Jalapenos and replace them with Anaheims, make it as fiery or as mild as you chose. I’ve used this on Chicken Breasts and thighs and several times on thick cut Pork Chops, all were great.

Sage and Lemon Cornish Game Hen

NOTE: Make at least 12 hours in advance. This only makes one hen (2 servings), but if you need more, you can double it, etc. We had this for Thanksgiving dinner. It was less expensive and less filling than turkey… and it didn’t make us sleepy after dinner 😉

This is a very tasty way to prepare cornish hens. It’s another family favorite we’ve served for years. Tarragon goes so well with poultry.

Cornish Game Hens With Double Cranberry and Thyme Sauce

This is the perfect entrée for a holiday dinner for two. Complete the meal with sautéed green beans and wild mushrooms and a wild-rice pilaf with chopped fresh parsley and hazelnuts. For dessert? Chocolate mousse topped with rum-spiked whipped cream and chopped crystallized ginger.
