I think this one is from Sunset Magazine but I'm not sure. Where ever it was it's one of the all time greats. If you make your own jelly you can control the heat, cut back on the Jalapenos and replace them with Anaheims, make it as fiery or as mild as you chose. I've used this on Chicken Breasts and thighs and several times on thick cut Pork Chops, all were great.

Ingredients

  • rock cornish game hen, 1 bird per person
  • jalapeno jelly (see my recipes or even better Toby Jermain's #71979 or store bought (but his and mine are better))
  • fresh lime juice

Instructions

  1. Crank up the Barbie, medium heat.

  2. Split the hens in half down the keel.

  3. Wash well and pat dry.

  4. Mix Jelly with enough Lime Juice to be as thick as BBQ sauce.

  5. (Each batch will vary, its trial as you go.) Baste the birds, place on grill on medium heat.

  6. Cook, turn, and baste.

  7. Watch the heat, They'll burn easily.

  8. Continue'til the juice between the leg and thigh runs clear.

  9. Serve with Saffron Basmati Rice and a Leaf Lettuce salad made with a varity of lettuces that is dressed with Lemon or Lime Juice.
