Anzac Cookies

This is based on a recipe from Beatrice Ojakangas’, Great Holiday Baking Book. She explains, “Australians still participate in the tradition of four o’clock afternoon tea, which can be a simple or formal occasion, and features a selection of sandwiches, scones, cookies, and cakes that are fancy and plain. This is the time to rest and ‘restoke the furnace.’ These thin, crisp oat and coconut drop cookies are a welcome part of the simplest or most elaborate tea.” I haven’t yet tried this.

Jelly Crystal Biscuits (Cookies)

I found this suggested on a New Zealand recipe forum when I was searching for recipes to use up some jelly crystals. My girls had a lot of fun making their *blue* biscuits and now have plans to make *green* ones!!! Great for a rainy school holiday day.

Vicki Bickies

My friend Vicki is from Australia, and my daughter Adiya adores her. Possibly the only thing she adores more than Vicki are Vicki’s cookies (only kidding Vicki, she does love you more). These are basically ANZAC biscuits, but a bit different. Vicki uses slightly more coconut than what I’ve seen in the ANZAC biscuit recipes here on Zaar, and since golden syrup is hard to get here in Israel, she substitutes maple syrup. It’s not often my Didi brings home recipes from other mothers, so take notice of this one, it’s good! Thanks, Vicki, for sharing these with Didi (and me).

Anzac Biscuits

This recipe has been in our family since I was a girl,it’s a favorite of every household here “Down Under”. My Mother made them and my grandmother too! It was a favorite with the armed forces in first world war that is why they are called Anzac Biscuits. Everyone has a different version, with added ingredients or omitting some ingredients.

Chocolate Chip Biscuits-Aussie Style

These are a very “moresome” bikky:) I used to sell these at the local markets, and they always sold out first. Very easy to make, and to really show off, you can throw a handful of chopped macadamia nuts in, gives them an extra crunch!!! PLEASE NOTE, THESE ARE NOTHING LIKE AMERICAN CHOC CHIP COOKIES, WHICH ARE SOFT AND CHEWY. I have also added coco powder to the mix and used white chips, looks good, but the white chips stay very hard.
