Here’s a bread that I made for one of our themed, carry-in work lunches. It is from Paul Grimes and was in Gourmet (May 2003). It’s a sweet bread with a grainy texture similar to cornbread. We served it with a curried/fruity chicken salad and iced tea but it would also be nice with butter or marmalade and a cup of hot tea….or maybe toasted….
Great with a cup of black coffee. This is my friend’s grandmother’s recipe. Mixed peel is the candied peel of various fruit. Use candied orange peel or candied papaya peel or a combination of the two.
Having a Luau party? Then this is a must but, you’ll want to make this throughout the year. The smell alone will get your significant other to release their grip on the remote, the kids will drift out of their bedrooms and the neighbors might come knocking. I dare to say, this might even be an aphrodisiac! It’s great alone but if you’re adventurous, slice some strawberries on it or drizzle chocolate syrup over it and top it with some whipped cream.
Very, very easy to double for large numbers of people. It can be served with rice or large flat breads for people to tear bits off and scoop up the curry. It can be frozen once cooked and cooled and the vegetables can be subbed 6 chicken breasts if you so desire.
I have been playing with dates again and I came up with these bars. These are a dessert date bar rather than a breakfast date bar. I hope you like them!
