Bahamian Sky Juice

This is an unusual presentation for an unusual drink. Be careful–it’s very strong. If, like me, you dislike gin, the recipe will also work with rum. From the Barbecue Bible. Make sure when you get the coconuts that you shake them to hear the water slosh around inside. Time listed does not include chilling time.

Bahamian Papaya Rum Cake

We vacationed in the Bahamas last spring and were impressed with their local rum cakes. Taste the flavor of the islands in this dessert.

Sausage of Chocolate

As good as the title is gross. My mum has made this for Christmas as long as i can remember and longer. I did not really like it as a kid but you kind of really grow into it. You may use whatever nuts or nut mixture you want, this year i used almonds, hazelnuts, walnuts and coconut which turned out great and looks very festive.

Coconut Damper

This was once traditionally cooked in the ground. Posted for ZWT8, found on Aussie Cooking.com. I’ve seen lots of damper recipes, but this is the first with coconut. Sounds more like a scone… please review and let me know!
