Baja Chicken Lasagna

A quick mexican lasagna easy to make, healthy, and delicious. I make my own tortillas (corn) but you can go with store bought if you’d like. I also found a light sour cream at Trader Joes that has one ingredient; milk.

Baja-Spiced Chicken Salad With Chutney Dressing

This is a wonderful salad that has color, texture and loaded with taste. Although there seems to be lots of ingredients, part of it can be done in advance. Serve with some french bread, this salad is quite satisfying. I used DiB’s Parmesan Peppercorn Ranch Dressing (18877) and Tisme’s Mango Chutney (191312), but bottled dressing and Major’s Mango Chutney would be a good substitute.

Dan’s Baja Chicken

In my many years in the kitchen, I stumbled upon this recipe in my experimentations with cooking for clients who wanted something “different.” The most important part of this recipe is the marinade. Once marinated, the chicken can be broiled, grilled, fried, or cooked any other way, depending on your dietary wishes/requirements. Best served with “Party Rice” (which I will post a recipe for later ;-)), this dish also goes well with baked potatoes or Penne tossed in garlic and olive oil.

Baja Citrus Soup

This soup is a great tangy southwest flavored chicken soup! Serve with tortilla chips! Great for summer evenings!
