Spanish Omelette

Spicy sausage, potato and red peppers in a omelette makes a quick and tasty meal – because it uses canned vegetables. But if you prefer, you can, of course, use fresh vegetables. If you are serving this to children, you will probably want to use a milder sausage. Adapted from a recipe from the Simply Great Recipes Club website.

Mini Honey Cheesecakes

A recipe I found in a 2002 copy of the Australian magazine “Super Food Ideas”. I haven’t made it yet but I’m posting it here for safekeeping and because I couldn’t find anything similar already posted. From the accompanying picture, these look like cakes (something like Greek lemon cakes) rather than what normally comes to mind as cheesecakes. They sound really easy to make, I love the sound of the ingredients and they certainly sound worth trying! The estimated preparation and cooking times below do not include cooling time.

Parmesan Puffs

A simple, super-quick-to-prepare recipe for an attractive and delicious appetiser, from the August/September 2005 issue of ‘Australian Vogue Entertaining + Travel’. The recipe recommends using good-quality store-bought puff pastry. For an attractive colour contrast, top half the puffs with the cayenne pepper or paprika as specified in the recipe; and the other half with one of these mixed with your favourite herb, finely chopped. Perhaps basil or thyme. You can have these fully prepared in advance, and bake just before they are required.

Pumpkin Hash Browns / Vegetarian Pumpkin Burgers

Found this recipe in a Weight Watches Magazine Nov/Dec 2006 edition. They called them pumpkin hash browns but they are more like pumpkin patties. The patty could also be used for a Vegetarian Burger. They recommended Weight Watchers cottage cheese but I think low fat cottage cheese would be alright. Because I don’t like eggs, I used ‘Egg Like’ which is an egg replacer. I skipped the ‘garnish step’ and serve them with to tomato sauce.

Parmesan and Sesame Crimple Crackers

I made these for dinner guests and everyone enjoyed them. Cooking them in batches takes a little long but if you have a few oven trays it would be faster. These could could serve these unusual crackers after dinner (supper) with cheese, dried fruit, nuts and wine. I served the with cheese and grapes. The recipe comes from a book called 100 favourite cakes and biscuits by Alison Holst
