Bulgarian Easter Bread (Kozunak), for Bread Machine

I’ve been experimenting with my 2 lb bread machine to see if it can do the hard part in making kozunak, since it’s so delicious, but a LOT of work. After much trial and error, this is what I came up with. The original recipe, from my Bulgarian mother-in-law, is posted separately.

Potato and Vegetable Omelet (Bulgarian Style)

I just love eggs and often eat breakfast for dinner. Came across this recipe on the Internet and decided to post it for the Zaar World Tour. This particular one is so loaded with good things, it’s a one dish meal. Or you can serve it with a simple salad and a little garlic or peasant bread. The original recipe calls for 4 tablespoons of oil, but I’m planning to cut that in half.

Aji De Carne [ Bolivian Pork and Bananas]

A sweet and spicy stew. The original was from an Eat Low Fat digest way back in the early 90s. Heat Scale: Medium. Sweet-heat. Serve to guests with a salad and a slaw; chilled fruit and a little corn pudding. Source: Chile Pepper Magazine Presents “Hot and Spicy Latin Dishes” a collection.
