OMG!!!! This is sooo good I’ve been eating it plain. This is from the May 2013 edition of Southern Living, and it’s incredible. The only differences is that the original recipe calls for 1/3 cup chopped cilantro (which I hate and so omitted) and to grill the mangoes. Well, I like my mangoes just this side of spoiled (super super ripe) so they didn’t need grilling, but if you are using less ripe mangoes you’ll probably want to grill them, too. This is just too YUMMY.

I’d forgotten this dish, but saw it on a menu in a new restaurant. Thought I’d give it a try one day. After the easy tamales came out so well that just translated to this perfectly. So simple! I served it over white rice. I used the copycat version of Lipton Soup Mix elsewhere on this site, it’s perfect.
This recipe is adapted from the November 2011 issue of Southern Living Magazine. I added some chocolate chips and a little Splenda on top because they will be a breakfast for DH. The original recipe called for using mini-muffin tins but we used full sized.
