Basque Salad

When I lived in Elko, Nevada, I dined at the local Basque houses quite regularly. The meals are served “family style” and every meal begins with soda bread, cabbage soup, and a green salad. I got this recipe from a former co-worker who use to work at one of the Basque houses, so it’s a pretty authentic recipe. It is simple, but has a lot of flavor, especially if you like garlic! This salad is best served with chicken or steak.

Traditional Bahraini Cardamom Coffee

This is an authentic recipe for the traditional style of coffee that is drunk in Bahrain. The key to a great cup of coffee is the ground coffee – if you can get Gulf Coffee then do so. Gulf Coffee is light / medium roasted beans which are then ground with cardamom & saffron. If you can’t get Gulf Coffee then use a coffee which is as lightly roasted as possible & add a little extra cardamom & saffron to the coffee as you make it.

Bahamian Conch Chowder

Conchs are quite popular in South Florida, as most there come from the Bahamas, were they are plentiful. If you cannot get frozen conchs, chopped clams may be substituted. If using chopped clams, add them at the last moment to keep them tender. The chowder is chunky, spicy, and robust with flavor – goes great with toasted bread rounds. Austrian Apricot Cake – Marillenkuchen

When there are apricots in abundance, this cake can be found on every menu, shop and bakery. It’s unbelievably easy, tasty and quick to make. You can also swap plums for apricots. The yoghurt makes the dough extremely light and fluffy.
