Karmir Pilaf – Armenian “Red Rice”

This dish is the definition of comfort food for Iranian-Armenians. Aromatic basmati rice, tender chunks of beef, and fluffy potatoes are cooked together in an unctuous spiced tomato sauce. My version has a little Tex-Mex twist: salsa!

Armenian Kufta

This would be categorized as a ‘stuffed’ meatball! It’s a recipe that cousin Debbie, sister Diane and I worked on this winter, trying to replicate our grandmother’s kufta. It’s been many many years since we’ve had this, and I think we have it down pretty well. It can be made as a side dish or a main dish soup, by adding pasta and vegetables to the broth when you add the meatballs.

Armenian Herb Marinade

This is a flavorful marinade that I have used mostly with beef recipes for the grill. Cooking time = marinating time & is approximate.

Armenian Basterma (Dried Cured Beef)

This is Armenian cured spiced beef. It is a wonderful, spicy beef jerky. Serve with Pita bread and Armenian string cheese. Heaven. You must serve this very thinly sliced as humanly possible. It is a rare delicacy.
