Rotwein-Nudeln Mit Fruehlingszwiebeln, from a Betty Bossi cookbook (Switzerland). A Swiss friend prepared this for me when I was living overseas. It is a simple but tasty dish. The salt helps the pasta absorb the red wine color. I have translated the recipe from German so it may need some tweaking.
Wolfgang Puck says about his weinerschnitzel: “This is a recipe from my childhood, an Austrian classic. It’s one of the most popular dishes at Spago where we serve it with mache, frisée, balsamic vinegar and pumpkinseed oil. But for me, it’s perfect with just a fingerling potato salad.” He modified his weinerschnitzel to chicken for the People Magazine article ‘Dinner for 4 under $10″, which was published February 22, 2010. This is a styrian version (Styria, Province of Austria) of a hearty, simple and vegan Greek Bean dish, that tastes heavenly and uses “Käferbohnen” (Scarlet runner beans) instead of white giant beans. If you can’t get hold of Scarlet Runner Beans use giant beans instead. The original recipe calls for about 200ml olive oil, i cut that lavish amount in half, and still find it’s enough oil left :). Prep.time comes without beansoaking time!
