Malaysian Laksa

Laksa is a Malaysian soup made from laksa flavour spicy curry, coconut cream, noodles, prawns/shrimp, chicken and lots of fresh toppings. This recipe is considered to be a cheat version because it uses laksa paste, however the results are still very yummy. You can vary the ingredients in the soup to your own taste. I had trouble finding fish balls and fried tofu puffs in my region so I replace the balls with extra green prawns/shrimp and fried my own tofu (I cut them into 1 cm by 1 cm cubes). Stir-Fried Rice Noodles With Black Bean Sauce

The idea of this recipe comes from Marie Claire Style Noodles by Jody Vassallo. If you like meat with your noodles you may add swordfish or chicken. Add it before the garlic, ginger and onions step. Other additions to this recipe could be a small can black beans and use garlic chives instead of chives

Lebanese Olive Pizza

OK I’m sure they don’t eat these in Lebanon, but it does use Lebanese bread and is a quick way to cook a light pizza for one or two.

Beetroot Dip / Beet Dip

This was given to me by an Egyptian friend who said it’s a family recipe. I like the fact it’s doesn’t contain dairy and nuts so it was perfect for Menu #24612 because we had a few guest who are lactose intolerant and have an allergic to nuts. You can chill the dip until it’s needed. It will keep for two days in the refrigerator but the flavour will enhance

Mushroom and Shredded Chicken Salad

A quick to prepare Asian-influenced salad which could be served as a main course or a side dish, from ‘tossed: 200 fast, fresh and fabulous salads’. If any of your mushrooms are particularly large, quarter them or chop them to an appropriate size. Ideal for making on a busy week-night with a takeaway – or take out – roasted chicken. BTW, 7 oz = 200g; 14 oz = 400g. The lime and soy dressing could be made in advance.
