Rissoles

This is an old classic Aussie meal. When I was growing up, we always had Rissoles and onion gravy at last once a week. Give it a try and let me if you like this old favourite. Cook time does not allow for cooking the gravy or the vegetables.

Chocolate Macadamia Nut Brownies

Macadamia Nuts were well-known to the indigenous inhabitants of Australia, and were first discovered by early white settlers in 1828. This now immensely popular Bush Nut is found in many Australian recipes. These Chocolate Macadamia Nut Brownies can be eaten straight away or made up to a week before required. Keep covered in the refrigerator or perhaps, if you want them to still be where you’ve put them in a week’s time, hidden. Adapted from a recipe on the “Australian Women’s Weekly” website.

Sweet and Sour Chicken

I fancied some sweet & sour chicken with a good quantity of nice thick sauce but couldn’t seem to find a recipe so came up with this. I used Bill Hilbrich’s recipe#2641 as a starting point for the sauce. It makes a generous size dish for two with lots of sauce for the rice / couscous or you could use say 500g of chicken and divide it four ways.

Apple Crumble

This is posted for a request. It comes from a very old copy of a PWMU (Presbyterian Women’s Missionary Union) cookbook. Crumbles are a favourite winter dessert for my family, and one I actually make, as they are so simple.
