Leftover Challah bread soaks up a rich cocoa-infused custard before being topped off with chopped chocolate and baked to delicious, almost brownie-like perfection. The only thing that would make it better is a scoop of vanilla ice cream on top!

I never use any recipe for my blog that I’m not reasonably sure is from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. Stoemp is a traditional Belgian potato dish that can be made with many different vegetables, including cabbage, carrots and onions. This version uses leeks.
There’s no pretention here: it’s simply a quick way to prepare endives/witlof/chicory so it can be be presented as a side dish. It could be a starter, but mine simply was not smart enough to dish up as a starter. The endives won’t be limp in this recipe, but still a little crunchy, depending on their size. They do shrink somewhat while baking. If you want them more tender, bake for longer, but cover loosely with foil. Ideal with a simple chicken dish, and its earthy saltiness is complemented by another side dish which is slightly sweet, like butternut or sweet potatoes.
We fell in love with these cookies when our friend Patricia at La Chatte Gitane (see www.lachattegitane.blogspot.com for her recipes) baked a batch for us. They are so soft and full of cinnamon taste. When I finally got the chance to make them for myself, I couldn’t find dark brown sugar so had to use cane sugar instead. This worked out pretty well, but I would recommend sticking with the muscovado sugar if you can find it. I also left out the almonds as we just didn’t have any in the house but they do make the cookies look extra special. Reduce the cooking time if you are baking these in a fan oven. The last thing you want to do is overcook them because then they’ll lose their charming softness.
