Weight Watchers Parmesan Crusted Chicken Schnitzels

This delectable low-calorie chicken dish is packed with flavour but not calories and is perfect for anyone following the 5:2 Diet as well as Weight Watchers. It’s a favourite meal for me and my husband when we are on a diet, when I serve it with lots of steamed greens and a grilled tomato. For a gluten free version use crushed cornflakes in place of the breadcrumbs. NB: Please note these don’t have any oil brushed on them as they are for a very low-calorie diet! If you are NOT worried about the extra calories, please brush the chicken fillets with a little oil before baking, or pan-fry them in a little oil or butter.

Healthy Vegetable Rissoles

This is a fairly simple recipe that helps to use up bits of pieces of vegetables in the fridge. You can substitute the beef mince with any sort of lean mince, and the vegetables are also able to be substituted as well as long as they are well grated or finely cut up. Quantities don’t have to be exact either – you can have more or less mince depending on personal preference. Serve on mashed potatoes or steamed vegetables with some gravy for a quick and healthy dinner!

A magazine find I made tonight. While it worked perfectly, I’m thinking of using the same mix and filling to make a meatloaf next time-half the mix, then the filling, topped with the rest of the mix and baked for about 1 hour.
