Hungarian Kifli (Christmas Cookies) With Dates

I woke up a few mornings ago thinking about a special Christmas cookie we used to make using my Hungarian grandmother’s recipe. I could remember the cookie, but not the name. Thanks to Facebook (who knew a friend in Cabo had a friend in Hungary!) I got the name but an internet search didn’t come up with something exactly like I remembered. I took the closest, which used raisins, and came up with this which is EXACTLY as I remembered, but much easier. NOTE: if you like the filling you might want to make about 1.3 times the amount to overstuff your Kifli. If there’s any left over roll it into balls, cover with sugar and call it a truffle. Hope someone out there enjoys this!

Melissa D’Arabian’s Pulled Pork

From Food Network Magazine Sept 12 edition, works well. Without Pork Shoulder I used Pernil, which is a lean boneless cut, and which matches the recipe although the photo showed bone-in. I also substituted chicken broth for the white wine.

Southern Living Butter Muffins

This recipe is adapted from the November 2011 issue of Southern Living Magazine. I added some chocolate chips and a little Splenda on top because they will be a breakfast for DH. The original recipe called for using mini-muffin tins but we used full sized.

Broccoli and Cauliflower Gratin

This is a yummy side dish. I could not figure out how to make it say one head of broccoli and one head of cauliflower, but that’s what you need.

Chinese Restaurant Ginger Cashew Chicken

Posting so I don’t lose the recipe, no idea where I got it. I’ve made it many times and it’s the best Chinese Chicken in a town where there are no Chinese restaurants! Some quantities are iffy, the original recipe didn’t specify.
