Algerian Chicken and Olive Stew

This stew is a traditional Algerian recipe called “Died b’l-Qasbour.” It is seasoned with saffron and cilantro. Serve over rice or couscous.

Alger’s Homemade Lithuanian Kielbasa

Alger, our mailman in the early 1980s in West Glenville, NY, gave us some of his homemade kielbasa to try and I BEGGED him for the recipe after we tried it. I have kept that recipe for 30 years now without actually making it, but we dragged it out again, planning to try it sometime soon, as we have natural casings on hand and a sausage stuffing attachment for our KitchenAid. The recipe is writtren in Alger’s words, not mine, so you may find it vague.Here’s to Alger, wherever he may be!

Greens from Cameroon

Posted for ZWT. I haven’t made this yet so the yield and time to make are a guess. Use collard greens, kale, mustard greens, swiss chard or spinach.

Chicken Lazone

This recipe comes from the restaurant “Brennan’s” located in New Orleans. No one has to know how simple and quick it is. I posted this recipe exactly as it was in the book, however, if you like a little “heat” please feel free to add some cayenne pepper to taste.

Crock Pot Whole Chicken

Tender, fall-off-the-bone chicken! Skip the overnight refrigeration if you are in a hurry. For variety, eliminate the onion and substitute a quartered lemon or two, stuffed into the chicken cavity. Chef Shapeweaver had a good suggestion: Use Fajita Seasoning Mix #28011 as another variation. Thanks! The standard size slow cookers are a bit too small and a whole chicken won’t fit. You’ll need a 6-quart slow cooker for this recipe.
