Spice Roasted Butternut Squash

Butternut squash is a delicious nutty tasting vegetable. Roasting brings out it natural sweetness, which is nicely balanced with the spices. This dish is great with grilled fish or meat, or wonderful on its own with a spoonful of yogurt.

Cherry Supreme Smoothie Shake

This is really good and healthy! Just a little trivia about cherries: Cherries were brought to America by ship with early settlers in the 1600s. Cherry trees were part of the gardens of French settlers as they established such cities as Detroit, Vincennes, and other Midwestern settlements. Today, on average, the United States produces more than 650 million pounds of tart and sweet cherries. Michigan grows about 75 percent of the U.S. crop of tart cherries, usually about 250 million pounds.

Cinnamon Maple Macadamias

From Justine Schofield hostess/cook of Everyday Gourmet and she suggested that this would be lovely sprinkled over your breakfast cereal or as a topping for yogurt or porridge. For dietary reasons I would use sugar free maple syrup to make it diabetic friendly.

Butternut Pumpkin Soup With Ginger and Coconut

Pumpkin soup is an Australian favourite, but I sometimes find it a bit bland. This recipe adds a little something extra, without overpowering the pumpkin flavour. You can garnish this with some coriander leaves (AKA cilantro). Can be served hot or cold. Note: if you like to make LOTS of soup, you’ll want to double this. It really does make only about 4 serves. It looks like a lot of pumpkin, but it cooks down to nothing.

Rose Water Soda

This is from a Womans Day cookbook. I haven’t allowed for chill time. An Australian cup is 250ml. Soda water is club soda. Garnish with rose petals.
