Fried Almonds

A delicious and extremely quick-to-make recipe which I was delighted to find in the October-November 2008 issue of ‘dish’. As I don’t like hot and spicy flavours, I made these with a mild paprika. Those who do like foods hot and spicy might want to add cayenne pepper. Please, do adjust the spices to meet your taste preferences. As almonds boost energy levels particularly at those times such as early afternoon when – given the choice – many of us may choose to have a siesta, I intend to have these on hand in a container at all times at work as a quick energy-boosting snack. I’ve found that even half a dozen almonds can provide the boost needed at such times, and these will offer a more flavoursome alternative to plain almonds.

Crock Pot Lamb Shanks

Modified version of a recipe I found on the ‘net that I thought turned out great. Apart from a few small changes to seasoning the original recipe called for a cup of wine rather than beer, sometimes I feel with tomato that makes things a bit rich when slow-cooked and I thought the beer substitution worked well. If you don’t want to use beer try a cup of beef stock instead of the stock powder / beer. Also whole garlic cooked this way doesn’t taste strong at all, if you want it to have a strong garlic taste you’d need to crush some of it.

Fried Chorizo With Garlic

Adapted from a recipe in ‘The Australian Women’s Weekly’s TAPAS antipasto mezze’. Chorizo sausage – surprisingly NOT in the Zaar Kitchen Dictionary – is a sausage of Spanish origin made from ground pork, garlic and chillies, so if you cannot get chorizo sausages that gives you the general idea: just substitute with a sausage you really like. The appeal of the dish is certainly going to be largely determined by your choice of sausage; and if you like a bit of heat in your food, either choose a spicy sausage or add something like red pepper flakes in step three. 680g? Well, 500g = 1lb; 750g = 11/2lb, and exact quantities are obviously not crucial here. 5mm? 3mm =1/8 inch and 6mm = 1/4 inch. Again, the exact size of the slices is not crucial, but be ready to decrease or increase your cooking time according to the thickness of your sausage slices. You can prepare this recipe to the end of step two earlier in the day (and have the additional ingredients ready) and complete step three just prior to serving.

Deluxe Fried Eggs

A simple and delicious way to transform fried eggs into a substantial one-dish brunch or snack dish. I read the basic idea for this recipe somewhere recently, then couldn’t find it again, but I added to the original idea – which just had garlic sautéed in the oil before adding the eggs – when I made this for brunch yesterday. I used some wonderfully orange-yolked free range eggs which certainly added to the visual appeal! Everyone loved it, and I’ll be making this again! The proportions used could, of course, easily be varied.
