Almond-Crusted Catalan Chicken

This really turns plain-old-chicken into something interesting. I’ve doubled this recipe and it works just as well. Goes great with some Basmati rice and a green salad. Prep time includes marinating the chickens. Use matzoh meal instead of breadcrumbs and this is perfect for Passover.

Prepare everything ahead of time. Found this recipe on Wolfgang Puck’s web site and it is very good. It is pretty time consuming but so worth the effort!

No-Bake Chocolate Oatmeal Cookies

These are wonderful, quick cookies. It is one of the first things I learned to “cook.” You can add more or less oats (3 cups work best for me). I have found that the weather makes a difference on the consistency, its best to make them on a nice sunny day. Also, It is very important not to boil them for longer than one minute.
