Pear Slush

Slushies offer unlimited possibilities for ingredients. Here´s one from Safeway Stores Eat Like a Champion. Berries in season could be added. Your option! From USA Pears.

Spice Roasted Butternut Squash

Butternut squash is a delicious nutty tasting vegetable. Roasting brings out it natural sweetness, which is nicely balanced with the spices. This dish is great with grilled fish or meat, or wonderful on its own with a spoonful of yogurt.

Lemonade Scones – Gluten Free

A great scone recipe using gluten free flour and lemonade. Use a good flour blend- the better the mix the better the scones. Also do not overmix as it will make a heavy scone (what my Dad calls a “doorstopper” ). This is an Australian recipe and uses bubbley lemonade soda/soft drink- not the traditional lemonade made on real lemons and sugar. I use “Orgran” brand flour for this recipe. After the first review on this recipe, I have made the scones again. The oven temperature is correct and the recipe worked fine. I have posted some photos now. Similar recipes on this site also use the same oven temperature. I have recently had the temperature on my oven tested and corrected. The temperature stated in this recipe is correct. You could use a lower temp and cook for longer. The quick cooking gives a firm outer layer and a beautiful soft steamy centre- perfect straight from the oven

Cinnamon Maple Macadamias

From Justine Schofield hostess/cook of Everyday Gourmet and she suggested that this would be lovely sprinkled over your breakfast cereal or as a topping for yogurt or porridge. For dietary reasons I would use sugar free maple syrup to make it diabetic friendly.

Chicken Schnitzel – Gluten-Free

A quick and easy schnitzel to make that’s gluten-free. I use gluten-free rice crumbs (Orgran brand). Alternately you can make you own gluten-free crumbs by laying slices of GF bread on an oven tray and baking in a slow oven until golden. Then process to a fine crumb using a food processor or placing the bread in a large zip-lock bag and use your rolling-pin. You can omit the cheese if you cant have dairy or use egg replacers if you cant eat eggs. Add some extra pepper or spices of your choice if you like hot or spicey flavours. If leaving out the cheese- you might like to add salt, pepper and other seasonings of your choice- may taste a little bland otherwise
