This is a really simple dish. It makes a great entree for 6 or a main meal for 4 people. This recipe can easily be made gluten-free – just ensure your ingredients are gluten-free. Most tamari sauce is GF or I use “Fountain” brand soy sauce that is now GF. If you do not require a gluten free sauce you can use regular soy sauce

Chocolate & Macadamia Baked Bananas

This is as easy a recipe as I’ve seen anywhere and SO delicious: just have a glance at the ingredients and the instructions. Do recipes come any easier than this? This is Todd Cameron’s recipe and it appeared in the October issue of the Australian magazine ‘Delicious’. Todd is the chef at the Gaia Retreat & Spa near Byron Bay. How do I explain Byron Bay to non-Australians? Well the name of the retreat should give you some idea. Byron Bay, situated on the New South Wales coastline, on the Pacific Ocean, has long been the retreat of hippies – or aging hippies – and in more recent years properties there have been much sought after by Australian actors, such as Russell Crowe and Paul Hogan. So although Byron Bay still has New Age leanings, it has also become the stomping ground of the rich and famous. That said, this recipe with its three ingredients and no chopping or grating, whisking or kneading, couldn’t be simpler. Or quicker!

Basil, Parmesan and Cashew Dip

I’m totally addicted to this dip. It’s a copycat of the current dips that are quite expensive to buy in the delis. It’s fantastic served with rice crackers or used in your cooking as a pesto sauce. It’s fantastic on pasta, chicken or fish.

Vienna Cream Frosting (Better Than Cream!)

A thick creamy buttery frosting for your cakes. You can make it vanilla, chocolate, orange, lemon or coffee. Its a great topping that you can put some texture into. It looks very effective. Definitely best to have butter out of the fridge for about an hour before required-it’s easier to beat butter that is not hard. The butter should not be melted. This recipe should easily ice 12 -16 cupcakes with piped icing tops. This recipe uses Australian Cup measurements-1 cup = 250ml & 1 tablespoon =20ml
