This is a salad for people who love onions and olives. You might want to use Vidalia or Maui onions for a slightly sweeter flavor. The preparation time includes time the onions and cucumber stand. The recipe comes from “The Best of Slavic Cooking” by Alojzije Kapetanovic and Ruzica Kapetanovic.
I’ve been experimenting with my 2 lb bread machine to see if it can do the hard part in making kozunak, since it’s so delicious, but a LOT of work. After much trial and error, this is what I came up with. The original recipe, from my Bulgarian mother-in-law, is posted separately.
These cookies are typically made in Bulgaria around Christmas. Very easy to make and yet so decadent. Very little sugar is used in this recipe so you can truly appreciate the pecan flavor.
