Marmitako is a traditional Basque dish, which I have yet to make myself. I’m told it’s delicious and seems very easy to make. I like the one pot idea! I’m unsure of the serving size, it seems like a lot to me for 4 people!
Another recipe I found in Better Homes & Gardens Cook Healthy Today. I am posting as written but I have add some white wine (which makes it a little more unhealthy but the flavor). Also I have used chicken thighs and canned tomatoes with the italian seasonings. Serve along with potatoes or rice.

I found this web on the net recently (I was on a Basque kick). I have not tried it out yet, but I am sucker for anything with lentils.
Spicy potatoes. You can do these in the oven if you like, but I find the stovetop to be easier when I have a limited amount of time and/or energy. When I’m feeling especially lazy, I sub out a premixed creole seasoning for the seasonings. Always add the fresh garlic though.
