Liptauer spread is based on a soft sheep’s milk cheese called bryndza in the Slovak language. The dish probably came from the Province of Liptov, in the Tatra Mountains, within the old Austro-Hungarian Empire and was first made by sheep farmers. As Liptauer, it has traveled to neighboring regions of central Europe, including Germany, Austria, Italy, Serbia, Slovakia and Hungary.
A delicious spread. Enjoy on bread or with (aromatic) cheese(s). Makes a very nice present. When the elder is in blossom in late spring it’s time to collect its umbels/heads and make use of their delicious, fresh, lightly sour sweet taste. Prep. time comes without overnight soaking.

This is an Austrian version of a smoked salmon spread. Horseradish is very popular in Austria and is used in many dips and sauces. The salmon used in this dish is not Lox, this is slowly smoked Alaskan Sockey and is flaked rather than cut. Enjoy it with some crusty Ciabatta bread and a glass of fruity white wine.
Garlic is so good when it’s roasted. Try this on Italian style bread topped with tomato, or added to your mash, pasta, or in butter for a baked potato.
