Fast Tomatoes With Basil and Balsamic

If you love tomatoes like I do, then you may enjoy this recipe. It’s a quick side dish/plate filler that doesn’t have too many ingredients, it’s healthy and tastes nice. Original recipe calls for Roma and Plum tomatoes but I use what is in season. This recipe comes from a book called “Purely Golden Door” by The Golden Door Health Retreats.

Cumin Potatoes

This is a regular family favourite that we serve with Moroccan or Lebanese style meals. Or Greek or Italian-whatever we feel like I guess! And we love these so much, 2 spuds each is almost not enough!

Roasted Potatoes With Sage and Lemon

From Australian Better Homes and Garden Diabetic Living issue 10 2007. It is suggested for a quick lunch – toss the still warm potatoes from the oven with mixed salad green, grilled squash, corn and capsicum (bell peppers) and pour over 100% fat free balsamic dressing and serve.

Baked Corn on the Cob With Garlic Herb Butter

Deliciously moist corn baked in the oven and seasoned with garlic and herb butter. You can use just plain butter with salt and pepper if you prefer or any flavoured butter of your choice.
