Special Cornish Hen

This is a very rich dish. Garlic lovers sing it’s praise. This is another of my originals. Recommended side dishes: Rouqfort Green Beans Candied Dill Carrots *This can be cooked at camp in a dutch oven with coals ( majority of coals on lid). Place hen on heat proof plate set on bottle caps or small stones to keep off the bottom of oven. Add water to bottom of oven to just cover; keep water level constant; test for doneness after 1.5 hours. To cook on grill, use indirect heat and turn often. Please make sure you sew or pin closed the cavity…it is need to steam the stuffing. Also make sure you cook to the recommended temp please for the same reason.

Pineapple-Stuffed Cornish Game Hens

This recipe came from Hawaii and was recently published in the Taste Of Home magazine. It has a pineapple-coconut stuffing. It is golden brown and wonderfully moist with a sweet sauce. Prep & cook times are approximate.

Traditional Cornish Pastie

The original version of this recipe was found at Britain Express. For many generations wives in Corwall would make these ‘Hot Pockets’ of meat and vegetables, often leftovers from the previous nights supper for their miner, dock worker, etc. husbands to take to work for their noon meal. This recipe represents the traditional recipe when it was made from scratch. This recipe is not made with puff pastry but with a simple pie crust which the British call ‘shortcrust pastry’. If you wish to cut corners you can use premade refrigerated pie crusts from the supermarket.
