Lemon Slice
Another New Zealand find. For a variation you can throw a handful of coconut into the egg mixture. Normal size of a slice tin is 35cm long x 20 cm wide x 4 cm deep.

This treat is popular at children’s parties here in Australia. (Servings and Yield depend on how many slices of bread you use.)
These are a very “moresome” bikky:) I used to sell these at the local markets, and they always sold out first. Very easy to make, and to really show off, you can throw a handful of chopped macadamia nuts in, gives them an extra crunch!!! PLEASE NOTE, THESE ARE NOTHING LIKE AMERICAN CHOC CHIP COOKIES, WHICH ARE SOFT AND CHEWY. I have also added coco powder to the mix and used white chips, looks good, but the white chips stay very hard.
Found in an online search for “Honigkuchen Marlenka” and posted b/c it sounds like it would be very good and something very different to make for tea or dessert. Might have to leave the walnuts off since the kids don’t care for them. Heck NO! They can pick ’em off! *lol*
Yoghurt cakes are always so moist. I love the sound of the lemon flavourings in this one. The recipe specifies natural yoghurt, but when I make it I plan to use creamy Greek yoghurt. I’m posting this recipe, which I found in ‘The Best of Lebanese and Middle Eastern Cooking’ for the 2005 Zaar World Tour.
