OMG!!!! This is sooo good I’ve been eating it plain. This is from the May 2013 edition of Southern Living, and it’s incredible. The only differences is that the original recipe calls for 1/3 cup chopped cilantro (which I hate and so omitted) and to grill the mangoes. Well, I like my mangoes just this side of spoiled (super super ripe) so they didn’t need grilling, but if you are using less ripe mangoes you’ll probably want to grill them, too. This is just too YUMMY.
This is a great salsa recipe. It takes a little more time but it’s worth it! My friends compare this to Baja Fresh’s dark salsa. This is a bit thicker and spicier though. Great on fish tacos or with tortilla chips.

After living in the UK and rightfully becoming a scone, jam and clotted cream addict… I had to learn how to make Cornish cream at home. How hard could it be? Well… harder than you would think, for all the wrong reasons. It seems that finding the right cream is the real challenge. The best Cornish cream is made from fresh, unpasteurized, cream. In our ultra-pasteurized world, it is next to impossible to find unless you have a diary farmer tucked into your list of bff’s. To further complicate things, I now live in the Netherlands. One would think that with all of the cows here (happiest cows on earth) it would be easier. No, no no no. Think again. So, I have modified, and tweeked a bit here and there to create clotted cream that is still a little piece of heaven on earth. That being said, if you can get your hands on unpasteurized cream to make this recipe, by all means use it! Also consider smuggling me some 🙂
A classic British No-Cook pickle for your sandwiches and cheese board! Remember Pan Yan pickle? It was a firm favourite in our home and my dad loved it slathered on top of cheese on toast! Now sadly discontinued, this fabulous British pickle with the catchy name is easy to make! I have fiddled around and recreated this recipe, and I am delighted with the results even though I say so myself. Lighter and with more “tang” then Branston pickle, I love it in sandwiches. Adjust the curry powder to your own tastes.
