This is an awesome low-carb version of loaded baked potatoes, and tastes far better than any version of mock potatoes that I have tried. In fact, this dish is soooo good, you will not believe it! I do not remember where I got this recipe, but it is a fabulous side to any low-carb meal. You will be pleased, I promise! Yum! Yum!
This is one of the first recipes I really “mastered” when I was learning how to cook. My husband got to enjoy this recipe at least twice a month because it was one of the few dishes I knew how to make. Now, that I’m a much better cook, we still have this delicious dinner on our menu at least monthly. It is so easy to put together and very good. If you like your casserole’s creamy, then this is one you’ve gotta try! I hope you enjoy it as much as we do!

Dont be deceived, this recipe looks singularly ordinary so one may be tempted to alter it…but then it’ll have all the subtlety of mac ‘n’ cheese w/ tomato…Please try it as written, discover the subtlety and simplicity of it all…As for me, this ‘casserole’ quickly became a favorite meal, particularly since I usually have all the ingredients already on hand…I imagine it could also be adapted to the microwave, but I’ll leave that to the alleged experts LOL
I got this recipe from a casserole cookbook. The original recipe does not call for onions, but I find that the onions are a great addition. I usually add the onions to the ground beef and cook both together in the same skillet.
