Cornish/ Clotted Cream

After living in the UK and rightfully becoming a scone, jam and clotted cream addict… I had to learn how to make Cornish cream at home. How hard could it be? Well… harder than you would think, for all the wrong reasons. It seems that finding the right cream is the real challenge. The best Cornish cream is made from fresh, unpasteurized, cream. In our ultra-pasteurized world, it is next to impossible to find unless you have a diary farmer tucked into your list of bff’s. To further complicate things, I now live in the Netherlands. One would think that with all of the cows here (happiest cows on earth) it would be easier. No, no no no. Think again. So, I have modified, and tweeked a bit here and there to create clotted cream that is still a little piece of heaven on earth. That being said, if you can get your hands on unpasteurized cream to make this recipe, by all means use it! Also consider smuggling me some 🙂

My Favorite British Cream Scones

These are light, tender and so easy. I work with a bunch of U.K people and one of them was kind enough to share this recipe with me because I kept on complaining how difficult it is to make good scones. You can add currants, other dried fruit, citrus zest, nuts, etc. – just stir it into the flour mixture before you add the cream. I personally love them with dried cranberries and orange zest.

Bodacious British Bangers and Baked Beans Brunch!

Juicy British bangers (sausages) with baked beans, fresh eggs, fried bread fingers and tomatoes. Yup! It’s bold and brash, but a great brunch idea for those days when half a grapefruit and some cereal just doesn’t tick the boxes! I cook this on a griddle – it is easier to fit all the food on at the same time, and if you spray the griddle with oil, it is healthier too. Yes, you can add bacon or potatoes or even mushrooms, but we like this simple combination of bangers, beans, egg and tomatoes with fingers of crispy fried bread. Quantities listed are suggestions for two greedy people; please do adjust the amounts to suit your personal requirements. This sets you up for the day, especially if served with freshly squeezed orange juice and a pot of tea. We are normally too full to have toast, but toast and marmalade would be a great accompaniment if you have room!

The quintessential British breakfast, and perfect for breakfast in bed – Boiled Eggs and Marmite Soldiers are a British culinary institution! The following instructions give you a perfect soft-boiled egg, suitable for “dipping” with your “soldiers”! You either love marmite or hate it, don’t use it if you cannot find it locally or just don’t like it!! You must still cut your toast into “soldiers” however!!
