A long time ago I had a recipe from a Basque cookbook for really tasty eggs poached in a simple stew of tomatoes, peppers, and onions. I’ve since lost that recipe, but this is pretty close to the flavors (though I won’t claim it as authentic Basque cooking!) This is really quick to prepare, especially if you dice your veggies as you’re cooking instead of doing th prep work all up front (for example, while the sausage sautes, dice the onion, after the onion goes in, mince the garlic, once the garlic is in, dice the peppers, etc.) This can be made vegetarian/vegan by substituting 1 tsp. oil for the sausage.
In some regions, “johnny cakes” are small, flat griddle cakes. In The Bahamas, Johnny Cake is baked. Serve your Johnny Cake warm with butter or jam as a breakfast treat or a snack, or enjoy it as a side dish with stew or soups. Recipe is from a Facebook group.
This recipe is a cultural staple in the Bahamas and throughout the Caribbean and is a family favorite(one which I have tweaked a bit over the years to suit various tastebuds) but its a wonderful bread/cake-like dish thats commonly served with soups and souses of all kinds (for breakfast, lunch or dinner)and can also be wonderful after dinner supper topped with jam and served with tea or cocoa. My family especially loves to eat it like a sandwich with cheese or peanut butter in the middle.Yum…the choices are endless. Hope you enjoy!!!!
