This recipe comes the The Santa Fe Cafe in Seattle. You can make this dish as spicy as you like, or mild if you prefer, and it’s still good.
Crispy chicken fingers coated with cashews dipped in spicy curry mayonnaise – yum!! This will serve 4 person as an appetizer, although we did polish off everything between the both of us! NOTE: Measure the cashews before chopping them (I use the PULSE button on my Tefal grinder). I find it’s easier to use a pair of chopsticks to roll the chicken in chopped nuts, then transfer to baking pan.
We had these at Bonefish Grill. They are a great app. Since then, I have been trying many recipes looking for one that tastes close. This is the best that I have found. Sometimes I fix these and just serve with a salad for lunch – very delicious!
Here’s a healthy alternative to fried wings: one of my famous recipes! The meat will fall off the bone! Unbelievable!
