Potato Farls (Irish Potato Bread) and Dippy Eggs

Potato Farls
- 2 Potatoes, medium, peeled and diced
- 1 cup of flour, all purpose – plus extra for dusting
- 1/2 teaspoon of salt
- 1/4 teaspoon of baking powder
- 2 tablespoons of butter, softened
- 2–3 tablespoons of milk, as needed
- butter, for frying
Dippy Eggs
- eggs, 1-2 per person
- salt and pepper, to taste
Instructions

Prepare the farlsBoil the diced potatoes until they are soft. Drain them and let them cool slightly.

In a mixing bowl, mash the cooked potatoes until smooth.

Add the flour, salt, baking powder, and softened butter to the mashed potatoes. Mix well to combine.

Gradually add milk, a tablespoon at a time, until the mixture comes together to form a soft dough. Be careful not to add too much milk.

Turn the dough out onto a floured surface and knead it gently for a minute or two until smooth.

Divide the dough into four equal portions and shape each portion into a ball.

On a floured surface, roll out each ball of dough into a circle, about 1/4 inch thick.

Using a knife, cut each circle into quarters to form four farls.

Heat a skillet or frying pan over medium heat and add a little butter or oil.

Cook the farls for 4-5 minutes on each side, or until golden brown and cooked through.

Remove from the pan and keep warm until ready to serve.

Prepare Dippy EggsFill a saucepan with water and bring it to a gentle boil over medium-high heat.

Once the water is boiling, reduce the heat to low so that the water is barely simmering.

Carefully crack the eggs, one at a time, into a small bowl or ramekin.

Gently slide the eggs into the simmering water.

Let the eggs cook for about 3-4 minutes for soft yolks or longer if you prefer firmer yolks.

Using a slotted spoon, carefully remove the eggs from the water and drain them on a paper towel.

Season the eggs with salt and pepper to taste.
