Potato Farls

  • 2 Potatoes, medium, peeled and diced
  • 1 cup of flour, all purpose – plus extra for dusting
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of baking powder
  • 2 tablespoons of butter, softened
  • 23 tablespoons of milk, as needed
  • butter, for frying

Dippy Eggs

  • eggs, 1-2 per person
  • salt and pepper, to taste

Instructions

  1. Prepare the farls
    Boil the diced potatoes until they are soft. Drain them and let them cool slightly.
  2. In a mixing bowl, mash the cooked potatoes until smooth.
  3. Add the flour, salt, baking powder, and softened butter to the mashed potatoes. Mix well to combine.
  4. Gradually add milk, a tablespoon at a time, until the mixture comes together to form a soft dough. Be careful not to add too much milk.
  5. Turn the dough out onto a floured surface and knead it gently for a minute or two until smooth.
  6. Divide the dough into four equal portions and shape each portion into a ball.
  7. On a floured surface, roll out each ball of dough into a circle, about 1/4 inch thick.
  8. Using a knife, cut each circle into quarters to form four farls.
  9. Heat a skillet or frying pan over medium heat and add a little butter or oil.
  10. Cook the farls for 4-5 minutes on each side, or until golden brown and cooked through.
  11. Remove from the pan and keep warm until ready to serve.
  12. Prepare Dippy Eggs
    Fill a saucepan with water and bring it to a gentle boil over medium-high heat.
  13. Once the water is boiling, reduce the heat to low so that the water is barely simmering.
  14. Carefully crack the eggs, one at a time, into a small bowl or ramekin.
  15. Gently slide the eggs into the simmering water.
  16. Let the eggs cook for about 3-4 minutes for soft yolks or longer if you prefer firmer yolks.
  17. Using a slotted spoon, carefully remove the eggs from the water and drain them on a paper towel.
  18. Season the eggs with salt and pepper to taste.
  19. Serve
    Arrange the Irish Potato Bread (Farls) and dippy eggs on plates and serve immediately while still warm. You can enjoy the dippy eggs by dipping the Irish Potato Bread into the soft yolks. Enjoy your delicious Irish breakfast!
