For the Topping:

  • 1/4 cup (1/2 stick) of butter, unsalted
  • 1/2 cup of brown sugar, packed
  • 2 pear(s), fully ripe, peeled, cored, and sliced

For the Cake:

  • 1 1/2 cup of flour, all purpose
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup (1 stick) of butter, unsalted, softened
  • 1 cup of granulated sugar
  • 2 eggs, large
  • 1 teaspoon of vanilla extract
  • 1/2 cup of milk

Instructions

  1. Preheat
    Preheat your oven to 350°F (175°C). Grease a round cake pan.
  2. Prepare the Topping
    Melt the 1/4 cup of butter and pour it into the bottom of the cake pan. Sprinkle the brown sugar evenly over the melted butter. Arrange the sliced pears on top of the brown sugar, covering the bottom of the pan.
  3. Prepare the Cake Batter
    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
  4. Assemble and Bake
    Carefully spoon the cake batter over the arranged pears in the cake pan, spreading it evenly. Smooth the top with a spatula.
  5. Bake
    Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Invert
    Allow the cake to cool in the pan for about 10 minutes. Place a serving plate upside down on top of the cake pan, and carefully invert the cake onto the plate. Gently lift the pan, revealing the beautifully caramelized pear topping.
  7. Serve and Enjoy
    Slice and serve the pear upside-down cake warm or at room temperature. You can optionally serve it with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.

Notes

If using a bundt pan, increase baking time 10-15 minutes.
